However, what I am interested in is food. So, while everyone else might be enjoying watching grown men kick a ball, I will be making Brazilian food. I’ve been populating my “World cup in Brazil” pinterest board with recipes of the food and drink variety that I’m looking forward to trying.

When I think of Brazilian food, I think MEAT. There is a lovely restaurant in Newcastle called Escobar’s and they come around with skewer after skewer of meat. Everything you can think of from steak to sausage to chicken to heart, eek. Not been brave enough to try that but apparently it is quite traditional. Having said that (about the meat), all the recipes that have caught my eye have been fish dishes that are packed with lime juice and coriander. So on Tuesday Reuben and I took a trip to the North Shields’ Fish Quay to get us some fresh goodies!

The recipe I’ve tried and will share today a Brazilian Fish Stew, made with Black Cod. I made it for Mike’s Birthday and he was aaaall over it! It was mega easy…so instructions to follow.

As an aside, I’ve already had a disaster…last night’s baby octopus salad (made with Baby Squid as the Fish Quay didn’t have any octopus) was a complete let down. It was entirely my fault…if you’re going to cook Squid, you need to cook it like this. What we had resembled something from I’m a Celebrity. A hideous mix of Kangaroo penis and anus.

Onwards with the good stuff! To celebrate the start of the World Cup, why not give this Brazilian Fish Stew a go?!

{I found the recipe on CleanEatingMag.com via pinterest and have made a few substitutions and alterations. For example, I used white rice instead of brown (which halved the cooking time!). Also they say the recipe is for 6, I would say 4 and you would definitely want more fish per person than they suggest. For a ‘cup’ I use our tea cups, they are basically the same as the american measurement}

World Cup Brazilian Fish Stew

What you’ll need:

Coriander Sauce

  • 1 cup of coriander
  • 1 white onion
  • 1 red chilli
  • 2 tbsp lime juice (I just used the juice from 1 lime!)
  • 4 garlic cloves

Rice and fish

  • 2 tbsp coconut oil
  • 1 cup rice (if using brown keep an eye on the liquid when cooking as you may need to keep topping it up)
  • 500ml chicken stock, 1 cup of water
  • 1 tsp smoked paprika (or sweet if you can find it)
  • 1 tsp chilli powder
  • 3 tomatoes
  • 4 cod portions (around 200g each) cut into large chunks

Coconut milk dressing

  • half a can of coconut milk
  • 1 cup of coriander
  • 2 tbsp lime juice

1. Make the coriander sauce – Pop all the ingredients in your food blender, I’ve used my mini one, and blend until smooth.

2. Lightly fry the rice – heat the coconut oil in a large pan and gently fry the rice for 5 minutes, stirring continuously, until it starts to brown. It will smell like popcorn!

3. Stir in the paprika and chilli powder, then stir in the coriander sauce and finally cover with chicken stock and water. Bring to the boil then simmer until the rice is cooked. Keep an eye on the liquid to make sure you don’t burn the rice!

4. Stir in the tomatoes and nestle the fish in the rice – I added more water before adding the fish. Once the fish is in do not do anymore stirring! Cover and steam until the fish is cooked. Around 10 minutes but it depends on how thick your cuts are, so you might want to leave it slightly longer.

5. Make the coconut milk dressing! – while the fish is cooking, again pop all the ingredients in your blender and whiz until smooth.

6. Serve it at the table – Then set the table and you’re ready to go as soon as the fish is cooked! Serve up and add a generous dollop of Coconut Milk Dressing.
